Title: corn and bacon chowder

INGREDIENTS

75g streaky bacon, rinded and chopped
1 medium onion, chopped
450g potatoes, peeled and diced
225g frozen sweetcorn
450ml chicken stock
450ml fresh milk
chopped parsley

METHOD

1. place bacon in a non stick pan and cook for 2 mins.
2. Add onion, potatoes, sweetcorn and stock, bring to the boil, cover and simmer for 10 mins.
3. In a blender, place half of the vegetables and liquid and blend til smooth.
4. pour back into pan with the remaining vegetables, add the milk and re-heat without boiling. serve sprinkled with parsely.

A friend a work gave me this recipe, I tried it tonight and its lovely. Got it in my lunchbox for tomo. I didn't really measure out the ingredients, just guessed..lol

mmm..sounds nice.

..and..that could be thickened with potato/corn flour and made into 'sauce' and served with mash...MMMM... ;D ;)

sounds very tasty Jessands,and if your into smoked fish just add some flaked Haddock to your final mix and let the fluid warm it through and your dinner then becomes very similar to Cullen Skink which can be a cross tween a chowder/broth/soup,whatever its fun to experiment and good to eat... :D
