Same as too many leeks this year, I also have too many parsnips. At the moment still having two small rows, each 2 meter, of parsnips. Very deep in the soil, because of the heavy rain, but they are huge and I need the space very soon.
Tomorrow, still a lot of snow and rain forecasted, making a lot of soup for the freezer:
chopped onion, garlic, gingerroot, carrot, thyme fry in butter for 5 min.
add parsnips, sliced. simmer for 15 min.
In blender. Add nutmeg a lot and salt and pepper. :P

I think Indian spices are great in our traditional English soups like parnsip, squash, leek etc. I adore homemade soup which is one of the reasons for having an allotment. I was given a pumpkin by a gardener who thought I was mad to eat it. He makes lanterns but chucks all the flesh! So this year I've chosen the best culinary varieties of squash so I can make lots of luvverly soup. I'm into broccoli and Stilton at the mo. :)

Have just polished off a bowl of curried parsnip soup I made
yesterday. Bit of grated cheese on top and it was YUM :P

I tend to add Garam Masala into carrot and parsnip soup, actually into most soups!
Not today though, Just had carrot and leek soup, nothing but buttery leeks to flavour it up yummy so warming.

NAttyEm, I love Cummin in soups, just love that sweet frangrant smell and taste. I love homemade soups. Problem is, once you make your own, you can never eat tinned stuff again!

Garam masala is dead easy to make and it's better when it's fresh. Like you all I love cumin in soup - well come to think of it - lots of things. Into broc and stilton soup at the mo and am having some for my lunch. I'll dig out the garam masala recipe and post it.
