I have been try my hand at tapping a few of my birch trees to collect the sap. I have got about a pint of the stuff. According to the information I have read it does not keep long, so I had some on some waffles tonight. Lovely stuff, but do you think I can freeze it as it did not take long to collect a pint and we will not use it fast enough.
Yes you can freeze it or you can boil it into almost syryp stage..but it takes time and efford.
I know I could look it up, but would you care to share how you go about doing this?
Boil, boil, boil until the water content is reduced to the stage you want it to be. Only negative point with it is that you loose the 'goodness' of the sap as well and the flavour is totally different too.

just a handy drill and a bottle i believe
This is the time of year to do it. just drill a hole in the bark, a tight fitting piece of plastic tube into a bottle and collect the sap. Once the tree starts showing signs of leaf it is too late to collect as the sap starts going bitter. Plug the hole when you have finished.
