Title: Marmalade. Help!

Hi - I made two batches of marmalade yesterday - one has set beautifully (ordinary seville) but the seville and ginger one is very loose set. What is the best way to deal with this please? It had loads of time in boiling as it didnt seem to be setting and in the end I potted it at the first sign...

Do I just boil it up again or do I add something to it? Shame - it tastes lovely

Boil it again and add a bit of lemon juice but test on cold saucer for setting point - too much boiling

results in marmalade toffee!! (personal experience ;D)

Thanks Debs - very quick answer. Will give it a go and try not to go from loose set to toffee!

Update - I used citric acid in end as I found a book suggesting more lemon juice would dilute the marmalade further. It worked really well and the marmalade is lovely! Many thanks

Lemon is a perfect addition to marmalade. I use  a whole lemon to 4 oranges - it helps to set it, and adds delicious flavour.

By the way - where I grew up near Dundee, the myth was that Mary Queen of Scots needed marmalade whenever she felt unwell.

The cry went out: "Marie est malade!" and marmalade was made for her.

 I found marmarlade a  bit iffy, some times great , some times not so great, and really unless you have a gizmo that cuts the skins thin for you it's very time comsuming.. I now go with a tin of Marmade, comes out great every time,,,,, try it..... qahtan ,
I picked up the gizmo thing at a flea market, yea flea market, this was before car boot sales...  but as long as you pour some boiling water over it before washing it's ok.....

I love the Marie est malade story, but does this explain why all jam in some languages eg German is marmelade.  It is only in English that it is seville orange flavoured.

Pick up a small bottle of Certo, re heat the marmalade to boiling stir in the bottle of certo boil rapidly for just 1 minute and fill and seal, it will set bueautifully

You may on;y need half a bottle consult the leaflet inside and use the amount they call for fo new marmalade.

Seville oranges change in pectin ,in the beginning of the season they are full off pectin and the mamalade sets good ,when they get nearer the end of the season the pectin is not as strong in the oranges,so you have to add pectin to help setting ,now I need to get my jelly pan out.
