Very Easy
660g finely chopped fresh pineapple
350g granulated sugar
45 ml lime juice
2 g grated lime peel
Directions
Put everything in a heavy bottom saucepan (must not be aluminium), bring to the boil over a medium heat, stirring every 5 minutes to stop any burning at the bottom of the pan. Must be at a rolling boil for about 40 mins or until the mixture has thickened. Pour into hot jam jars, put cling wrap on the top of jar and screw the lid back on.
