Has to be said,Tiramasu does get a pounding in our household and when I found this filo pastry version its well worth making.
Ingredients
4 sheets Filo pastry
Spray Oil
1/2 cup strong black coffee
1 tbsp Brandy
1 tbsp Sugar
4 sponge fingers (or Amerettii Biscuits)
150 grms Greek Yoghurt
Fresh Raspberries
Icing sugar for dusting.

spray each sheet of filo with oil and then cut sheets 3 ins wide x 8 ins long and shape over mould in clockwise fashion till there are no gaps.

heat in oven for 10 mins on 180 degrees and then cool.
Remove from mould.

mix coffee,brandy,sugar together and place amaretti biscuits (or sponge fingers) into the fluid to soak up the liquid.,,drain off remains.

add yoghurt and blend in together (add spare liquid if too dry)

Place mixture in base of filo pastry mould then add more yoghurt
on top...then more mixture and more yoghurt till mould is filled.

add fresh raspberries and sprinkle with icing sugar.
