Title: Lemon and Lime Panna Cotta (for Alimo)
Post by: gazza1960 on January 08, 2012, 11:48:42
This was a good excuse as any to make them again Alimo, and judy thanks you for it.!!!!!!

WARNING  !!!!!!!!!     compaired to the orange version this one is a full on fatty creamy job that
needs tempering with sour cherries or mixed fruits as on its own its a tad over the top but is
bloomin tasty with Amaretti biscuits crunched over.
TIP......slice the Lemons and limes and when serving suck on a slice and take a mouthful of the pudding as it cuts down on the richness.... ;)

Ingredients............

375ml full-fat milk
375ml double cream
1 lemon , zested
1 Lime , Zested
1 vanilla pod
100g caster sugar
4 leaves Gelatine soaked in cold water

equals about 4 x Ramakins worth.

serve with sour fruits and Amaretti biscuits

Put the milk and cream in a saucepan. Add the lemon/Lime zest ,vanilla pod and sugar, bring slowly to the boil then remove from the heat.
Meanwhile soak the gelatine in cold water for 5 mins then remove from the water and squeeze out the residue fluid and add to the warmed cream mixture.
Leave for 5 mins to melt, stir thoroughly then sieve into Ramakins.
Leave to chill overnight or at least 4 hours.
