Title: Mozzarella Chicken Breasts with Parma Ham

Ingredients for Chicken breast

1 chicken breast (per person)
1 pkt of Buffalo Mozzarella in fluid(sliced)
1 Tbsp of Tomato paste (per chick portion)
sprinkle of Italian seasoning
3 slices of air dried cured ham( parma or Schinken) per portion

Ingredients  for fried veg

1  onion sliced
1/2 red pepper sliced
1/2 Green pepper sliced
12 mushrooms
1 Tbsp Paprika
olive oil (cooking)

Jacket spud or butter mash

Butterfly the chick breast and smear the tomato paste across both sides
then slice Fresh Mozzarella and place inside breast (salt and pepper).
Sprinkle Italian Herb Seasoning over before closing together.
wrap each chick breast with Parma ham slices.

Cook in oven for 20 mins on 180 degrees.
(you can cook the jacket spud at same time.)

meantime,heat the oil and add the paprika so the oil takes on a rich red colour ....now fry off all the veggies till soft.

As an alternative we like the chick breasts served on Tagliatelli ribbons with a tomato sauce..... ;)

Serve and enjoy.

Oh and wear plenty of kitchen towel as a chin napkin as the cheese Oooooozes out..lovely grub tell ya mum  !!!!!!!!!!! :D

Now there is another super dinner idea.  Italian Herb seasoning?  Is this the same as pizza herb mix?

At brother-in-law's house, we enjoyed a similar dish, but instead of cheese, they filled the chicken breasts with pate.  Very nice too.

Keep them coming.  You do realise, that you are easily creative enough to think about publishing your 'Stylish Suppers'......... because they make people want to go and cook them there and then  :)

Ye gods Galina there are far too many combinations for Italian seasoning,when me and jude are in kingston there is a smashing little Italian deli that drags us  off into its "back alley lair" for some superb pasta lunches,I asked the fella
and he advised that his Old country folks like the mixture of all oven dried ..........

Oregano  1tsp
Basil 1tsp
Marjaram 1tsp
Thyme 1tsp
Rosemary 1/2tsp
Sage 1/2tsp
Parsley 1tsp
mint 1tsp
fennel seeds 1/2tsp
Black Pepper corns (10 ground)
Rock salt 1/2tsp
Dried Garlic( I prefer to roast 1 whole Island White clove and smear the softened Garlic paste)
Red Pepper Flakes( I like to use 1 x Hungarian hot wax chilli dried and ground up in the P&M)

of course its each to their own as you may like one herb more than another.

psssst........tween you and me make up a batch Galina and soften some butter in a pan add some Parmesan cheese and sprinkle some of the herb mixture into it,mix it with a fork and smear it onto hot crusty french stick slices....its to die for..!!!!!!

or if you let it cool and smear it onto crackerwheat....delish.

or.....this one is a tad messy,bake a large jacket spud and hold it in place with a cloth now take the top off of it like you would a runny egg....scoop out some of the tatter but not too much that the tatter collapses...now stick the tatter mixture in a bowl and add the butter/herb/cheese mixture into it and scoop in back into the tatter jacket and eat it with a spoon or fork...bluddy lovely.

Somewhat similar.  I have Pizza Herb Mix from the Daily Bread Food Cooperative and it contains:  Parsley, Oregano, Sage, Thyme, Marjoram and Tarragon.  Doesn't give proportions on the label.  It smells divine.

Thanks for the genuine Italian deli recipe and for ideas on how to use it.   ;D
