Get some chunky lamb chops from ya butcher or Pork chops and you can decide if your in a sweet or spicy mood.
Ingredients
6 Lamb Chops
2 tsps of Ground Cumin
1 tsp of Ground Coriander
1/2 tsp of Ground Ginger
1 tsp Chilli Flakes(or 2 fresh chillies of your choice)
zest & juice of 1 lemon
1 tsp of Ground Pepper
2 Garlic Cloves Crushed
4 tbsps of Olive Oil
Place Cumin,Coriander,Ginger,Chilli,Lemon zest+ juice black pepper
garlic and olive oil in a large bowl.
mix together and smother chops,leave to marinade for 2 hours
or overnight if you have time.

Roasted veggies can be anything of your choice...!!!!!!!!!!!

I chose,Red Peppers,Onions,Beetroot,mushrooms Tomatoes,Chillies
Courgettes,Zuchinni,and Pumpkin.
Smother Veggies with Olive Oil and salt and pepper+ mixed Herbs of you want more flavour.
Roast veggies on 210 for 30 mins(mushrooms & Toms 15 mins)

Roast Chops on 210 for 15 mins each side(or as you like your meat)

I served it with Cous Cous but roast tatters also go down well.

Sweet pork chop variation

1 tbsp of runny honey and 2 tbsp of dark brown sugar,heat in micro for 20 seconds and mix together.

fry pork chops in olive oil to brown them on the outside.

smear honey mixture over chops and cook in oven for 6 mins each side or to your taste then drizzle hot honey mix over chops on your plate....scrummy.

I don't really need putting any pounds on..but would sacrifice it all for sake of some nice food.. ;D
I just keep looking all cookery programs and drooling after all the food..at the moment I'm lacking any energy getting my own finger out.. ::) We are living with just some quick 'put it together in hurry' cooking. Just grill the chops as normal and add the ...........
Jack Daniels Peach sauce over the chops for the last few mins to warm it through so in effect its like a glaze.
Its also deeeeelish smeared over hot Grilled Gammon.....yum.
30g unsalted butter
3 shallots finally chopped
2 tins of peaches
2 tbsps fresh lemon juice
2 tbsps apple cider vinegar
150 grams light brown sugar
1 tbsp Worcestershire sauce
120ml chicken stock
80ml Jack Daniels
Salt and freshly ground black pepper
Melt butter and add shallots then the peaches
Add the lemon juice, cider vinegar, brown sugar, Worcestershire sauce and chicken stock. Simmer for 15-20 minutes until thick.
add the Jack daniels, return to a simmer, cook for 5 more minutes and remove from the heat. Adjust the seasoning and sweetness. Puree the mixture till smooth.
