Pick a couple of your fav plot spuds,I chose King eddies, skin and cut into 1 inch pieces.
Heat a shallow dish in oven (210degrees) with a thin layer of olive oil.
allow oil to heat up (10 mins)
meanwhile
Pat pieces dry with kitchen towel and place in plastic bag.
add..............
2 tsps of Sweet Paprika Powder
1 tsp of ground black pepper
1 tsp of ground rock salt
1 tsp of Italian Seasoning
shake bag like mad till spuds are covered.
Place potato pieces in hot oil, after a few mins swap sides with tongs so that after 10 mins all sides have a crisp outer shell.
Turn heat down to 180 degrees and continue to cook for 35 mins...or longer as I prefer mine well crispy.
Take spud pieces out and place in ceramic bowl now add a few slices of your favourite Chorizo and some black pitted olives.
now drizzle the sizzling hot oil from the pan over the top.
Yes,mine are dark and crispy, but you can cook the spuds according to how you like em !!!!!!

Take a piece of the potato and chorizo and Olive and eat together......the taste is to die for.
A nice piece of Focaccia bread dipped in the hot oil is delish !!!!!!!!!!!
You can serve these with most things, but plain cooked fish fillets or chicken breasts are ok.
Enjoy.
