I love this recipe, I got it out of a sainbury's magazine 10 years ago and still use it, this time of year it is warming, light and low in calories:
1 Kg of baby squid (I buy mine from Tesco's and Asda frozen) cleaned and chopped in half
8 tablespoons extra virgin olive oil
4 garlic cloves, finely sliced
250g cherry tomatoes
10g capers
A bunch of parsley, roughly chopped
6 anchovy fillets
1 small red chilli, finely chopped
4 tablespoons white wine
Pinch of salt
1. Heat the olive oil in a saucepan, add the anchovies and capers and fry until the anchovies melt. At this stage add the garlic and chilli and fry for a couple of minutes. Then add the baby cuttlefish and a pinch of salt and stir fry for 2/3minutes. Then add the wine and evaporate a little.
2. Add the cherry tomatoes and parsley, reduce the heat to a low setting, cover the saucepan and cook for 45 minutes.
3. Cook linquine according to packet , drain and stir in.
The reason it has cuttle fish is the original recipe called for cuttle fish and I never changed it on my pc..it is just as lovely with cuttel fish and big fat prawns... :) :)
I make it with prawns, as the OH will eat those. Once of my all time favourite and quick meals to make :)
A slightly different version is going to be made tonight with salmon bits, capers and dill
