Title: Italian Autum Cake
Post by: Gadget on November 03, 2011, 09:10:01
This is one of my favourite recipes by Gennaro Contaldo and is really easy to do.

put the oven on 180 and grease a 24cm spring form cake tin

2 figs - chopped into chunks (skin an all)
4 plums - chopped into chunks
1 pear - chopped into chunks
1 apple - chopped into chunks
(optional  - almond flakes)

3 eggs and 1 egg yolk
150g caster sugar
125g of butter
300g plain flour
3 teaspoons of baking powder

whisk the butter, sugar and eggs to fluffy (it may look curdled by don't worry) then beat in the flour and baking powder pour the mixture into the cake tin then push all the fruit into the mixture (this is the fun bit) sprinkle the almonds on and a bit of brown sugar and bake in the oven for 50 minutes, serve warm with ice-cream.

it is a really lovely pudding or afternoon tea.

Sounds delicious, and I love the idea of pushing the fruit into the mix at the end. I bet a few kids (big or small) will enjoy that!

I haven't got figs, plums or pears at the moment - do you think it would work with frozen raspberries, blackberries, gooseberries along with the chopped apple? I would say thawed, but they would then be difficult to push in.....

Absolutely, I wouldn't bother thawing them, just push them in and see ;) I would of though that combo would be scrumptous  too :)

I've done something similar with frozen berries..and it works fine..being frozen not only help them to be pushed in..but the fruit holds together while cooking too..and although they do go 'mushy' when cooked but its not all over the place.
Black berries and apple..mmmm...I always freeze batch of blackberries in purpose for to use in cake mixture..
Goosies and lovely on their own..their flavour gets lost if mixed with some other fruit...I use bit of honey to go with them.
