Does anyone have a favourite mincemeat recipe they would like to share, it looks easy enough but I have never tried making my own

Christmas Sweet Mincemeat
• 175g seedless raisins
• 120g sultanas
• 120g currants
• 50g cut mixed peel
• 50g chopped dried prunes
• 175g soft brown sugar
• 225g cooking apples - peeled, cored and grated
• 115g shredded suet
• 1 orange zest and juice
• 1 lemon zest and juice
• 25g chopped almonds
• 25g chopped pecan nuts
• 10g mixed spice
• 1 tsp freshly grated nutmeg
• 75ml brandy
Mix all the ingredients together(use only half the brandy) in a large deep baking tray and cover and leave to stand overnight.
The next day, preheat the oven to 120°C cover the tray with foil and place in the oven for about 2 hours.
Leave the mixture to cool slightly, then mix in the rest of the brandy.
Sterilize clean glass jars in the oven and spoon the warm mincemeat into the sterilized jars, seal and leave to mature.
Makes 1.3 kg
Food Fanatics Tip:
This mincemeat needs to mature for at least two weeks before using. Once sealed, it can keep for at least 6 months.
Thanks for that Gadget. I used to make mincemeat every year but dropped the habit. Never baked mine though it seems a good idea- save it fermenting!

I have been making my own mincemeat for over 30 years and would never buy it! Just occasionally during a hot summer I've had problems with the odd jar fermenting - I used to store them in the garage which got fairly warm I suppose. A few years ago I tried the cooked method below, as it seemed less likely to ferment. All the jars were fermenting within 3 or 4 weeks!Complete disaster. So I'm never trying that method again. I hope it works for you Green Lily.
My ingredients are similar to Gadget's except it also has a good quantity of sherry. I use more spice, and always dark Muscovado sugar. I leave it to soak overnight in a big bowl. once put in the jars and pressed well down I top up with brandy.
Might have do make some in future usually we buy a giant tub of sainsbury's and 'doctor' ;D it to suit. Sainsbury's don't seem to have their giant tub anymore.

Well I did make this mincemeat minus the pecans and a little less sugar. Kept it in the fridge until D Day.May have added a splodge more brandy Highly rated by one and all. Thanks for the recipe
