Title: Sweetcorn all dried up.

Hi folks any idea what we can do with our sweetcorn?  ???

It has dried up on the cob and I wondered if anyone has a recipe for using the dried kernels. Can we grind them up into corn meal?

I have about a dozen small cobs as dried as a witches whatsit.  :-X I'll be watching this thread.     Sorry I couldn't be any help.     Cheers,     Tony.

JayB amy be able to help on this one as she was going to try it with her Painted Mountain corn as its more for flour.
I just feed it to my dwiddling number of chickens.

In Africa we used to grill them over a BBQ or campsite fire... place them near the coals on on the BBQ and turn every few minutes so it just browns the pips/kernels... rub off the cob and eat.. delicious  ;D

My mother used to bake dried corn  to serve at Thanksgiving as a nod to the Indians who taught our ancestors how to grow it. She'd pre-soak the corn in boiling water for about two hrs to soften it, then use the kernels whole instead of using a food processor which gave the dish more texture than this recipe below.  You could also soften them and make corn chowder.
Time: 1 hour 15 minutes

7.5-ounce  Dried Sweet Corn
5 cups milk (less milk if you've pre-soaked the corn)
3 1/2 tablespoons melted butter, plus additional for the baking dish
1 teaspoon salt or to taste
1 tablespoon sugar
4 eggs, beaten until well blended.
1. Preheat oven to 375 degrees. Using a blender or food processor, chop
the dried corn until finely ground.
2. In a large mixing bowl, combine the ground corn, milk, butter, salt,
sugar and eggs. Mix well.
3. Butter a shallow 2-quart baking dish. Pour in the corn mixture. Bake
until set and golden brown on top, about 1 hour. Serve
hot.
Yield: 8 servings.
