Title: Freezing tomatoes
Post by: lottie lou on September 01, 2011, 21:25:42
Has anyone frozen whole tomatoes - thinking of the small ones - and if so what were they like when defrosted.

My mum freezes tomatoes whole and then uses them in cooking.  I guess they don't hold their shape!

Small ones - just go to mush, you end up with an empty skin. I freeze Roma, though, halved and de-seeded, they are just about OK for frying, and fine to go in casseroles.

Agree with what others have posted, but it is worth doing just for the fun of seeing them :)

I freeze surplus, both cherry and large, and use for soups and casseroles.

I also freeze whole tomatoes, when defrosted they are just like tinned tomatoes. You do have to pour some water away but I replace with tomato puree. I make soup with most of them. I add a tin of value spaghetti as this takes away the acidy taste. I add spices to taste, eg: Tabasco, chili, Worcester sauce. just keep tasting till you like it. The spaghetti really is a must for soups as it adds colour just like heinz only better. All into the liquidiser and my tomato soup is world famous. Well a family favourite.
Remove skins when they are defrosted. Dead easy.
