Title: lemon curd..

 last recipe here, next lot will be in recipes

Microwave Lemon Curd

2 Lemons (juice & rind finely grated)
3 Eggs whisked and strained
2 oz Butter (or up to 4 oz)
8 oz Sugar (scant)

Melt butter, add rest of ingredients 5 mins in Microwave( stir every minute)

I always make lemon curd in a microwave - it is so simple to do that way, it just needs regular stirring, although I would advise using a mid-power after adding the eggs, rather than full power. 
It does need to be stored in the fridge afterwards.  I've certainly kept ours several weeks. but watch it! 
Try it substituting some  lime for lemon, or even Seville orange.

Does that recipe make enough for those 2 jars full?
Sounds very simple to make..would it work exactly same on pan?..I don't have microwave...
Of course the time that it takes to make would be different..
