- anyone?? = Tim
Our box scheme (riverford) has just put their marmalade pack back on their list ;D
Ive made one batch of marmalade last week which turned out really well so I have just bought another lot of sevilles from our local greengrocer and shall be making another 7lb tonight.....how sad to be making marmalade on a friday evening!!!!!!
Love Riverford, but most of their boxes double up on our own produce. Shame.
Oh! Tonight - Tesco have finally got them in. Our local grocers threw them all out last year because no one wanted them, & said they would not be having them again!!
If you want a pressure cooker marmalade, check out mamta gupta's site. Says he modestly!! = Tim
ahh well Tim before this time next year I hope to have cancelled them :)
I love marmalade, its such a temptation for my daughter though that can't hace oranges because of her eczema that I feel guilty eating it.
You can order just the oranges from Riverford I'm sure, without a whole box. www.riverford.co.uk (http://www.riverford.co.uk) Marmalade Kit £3.20 gets you £1.5kg oranges and 2 lemons. I have no idea if this is expensive or not!
Thanks! = Tim
got some a few weeks back (maybe even a month) from my lovely farm shop.
Yup - they're here. There's one stall in Leeds market that always has them, and they were there today. We only left the nasty ones :) :) :)
Tomorrow's a marmalade day!
All best - Gavin
XXXX Rang Tesco 2 days ago - yes, they were in stock - today, went to get them - we had to bin them because no one was buying them!!!
WHAT is happening to our world? = Tim
oh no! And I watched the lovely Delia making marmelade last night on TV!
Sainsburys had what they called 'marmalade oranges' a few weeks back - I picked them up by mistake thinking they said manderin oranges.....sure that optician told fibs when he said I had 20/20 vision! Don't know if they are still doing them as I generally avoid sainsburys.
That's funny - in the Co-op today, I said that 'these Mandarins look like Sevilles'. Oh no he said.
Oh well - we still have 4lb in the freezer from last year. BUT - they will need different treatment.
So - even Waitrose let me down. So out come last year's, but I've got to figure how much extra pectin they will need - in what form. Or just another lemon for the acid??
Didn't realise the pectin levels reduced after freezing. This could answer my question late last year when I made my second batch of blackcurrant jelly. The fresh fruit jelly set like rubber, the second batch from frozen currents produced a soft floppy, but equally scrummy, jelly.
Tim,
This may not interest you, but, most supermarkets sell tinned seville
oranges ready to make into marmalade, they are priced approx £1.50 per
tin and are called MAMADE. It makes delish marmalade. :P
I got into making my own marmalade after buying sugary sweet
supermarket marmalade, which was severely lacking in fruit content
YUK!!
I am sure I have some lemon variety in a cupboard- shall go and check
and return to confirm ;D
Debs
YES! Have a tim of the prepared lemons variety.
Ingredients are: 67.5% prepared spanish lemons, water, citric acid, pectin.
It has no artificial colours, preservatives or additives.
The tin (850g) makes 6lb of marmalade.
I usually buy mine at Kwiksave but have seen it at larger
supermarkets, and can highly recommend the seville oranges, as
I have never yet made the lemon variety.
If you can't get fresh sevilles it is next best thing and much better
than supermarket stuff :-X
Happy marmalade making...
Debs
THATS IT !!
All this talk about marmalade has got my tastebuds screaming....
Am now off downstairs to make the lemon variety which I shall be
spreading on thick sliced granary bread for breakfast tomorrow,
accompanied of course with a cup of tea.
Simple pleasures ;D
Debs
Emma - see better picture. Pectin - Â much argy on this, so looked it up & found even more!!
But I'm going to add something - not sure what. I see now that it says cook from frozen - oh, dear!!
Debs - yes, a face saver, & your kind efforts will not, I'm sure, have been wasted - there must be others in the same position.
But - I seem to recall, from when my m-in-law used to use it, that it was thinly sliced? And we like it chunky. So we'll have a crack at the snowballs & report back!
In passing, we use a pressure cooker - great time saver.
why seville oranges? you can make equally if not more yummy marmalade using tangerines, and i am sure other citrus fruit.
i have a book at home called 'sensational preserves,' and boy are they!
there are several pages of marmalades of various kinds in there.....
just a thought
svea
RESULT.
The lemon variety (thinly sliced Tim) is tangy and absolutely delicious.
Tim - The seville oranges are prepared 'thick cut'.
If you google 'mamade' you will see a picture of the tin.
I am fussy about eating a good marmalade and can give it thumbs up!
Debs
Svea - yes - there are all sorts - and jams too - but I'm stuck on the fresh, sharp fruitiness of Sevilles. Don't eat much of it these days but, when I do, it has to be what it has always been for 60 or 70 years!
Debs - that's interesting. Maybe we should get a tin or two in, in case I'm so slothful next year.
the nicest shop bought marmalade (on a bit of a side note) I have found is the Defour fruit spread Orange and ginger. It is yummy! All the Defour spreads are made with fruit. No sugar at all. Grape juice to sweeten it.
Yes - daughter's onto those!
fair enough tim :)
hope you are successful.
emma, the dalfour jams used to be made with apple juice as sweetener (about 5 years ago?). this was suitable for people with type II diabetes (who control it through diet, like my dad).
i thought grape juice does not offer this - i am under the impression that grape contains sugars which are too quickly absorbed (dextrose?) and hence are not suitable for a diet controlled diabetes.
i am happy to learn otherwise though :)
svea
PS; they are super yummy jams though :)
Does the grape juice negate an ordinary slimming diet??
I googled it and came up with this:
Quote
Fruit Concentrate/Sweetener
includes frozen juice concentrates such as grape or apple juice and refrigerated jars of fruit concentrates which are typically blends of juices such as peach, pear, and pineapple juice. Fruit concentrates are thicker than fruit juice concentrates and are made by cooking whole fruits at very low temperatures until they have been reduced to a thick syrup. Fruit sweeteners work well in most baked goods.
They are not much better then white or brown sugar !!!
If you are sick, avoid it !!! 1 %
complex carbohydrates
90 - 96 % simple sugars, fructose, glucose, and sucrose
And on a different one:
Quote
Grapes, including purple grape juice, and red wine
Flavonoids, (resveratrol, quercetin and catechin).
Â
Fight heart disease and cancer. May help lower the risk for asthma. May benefit people with diabetes
although:
....Fructose (sugar molecule found in fruits). Fructose may produce a slower increase in blood sugar than sucrose, which may have some advantages for people with diabetes. Dark-colored fruits are rich in important vitamins and other nutrients, and studies continue to report their benefits for the heart and health in general. Other fruits, such as apples and grapes also have important food chemicals. (As with any sugar, however, excess use of fructose is associated with triglycerides and harmful cholesterol levels.).....
Though that was just two websites - so you should look a lot more before trusting it!
What a minefield it all is!
*she says munching on toast and strawberry Dalfour spread*
Thanks, Em!!
Quote...excess use of fructose is associated with triglycerides and harmful cholesterol levels....
and gives you the runs, too :D ;)
thanks em for the info. looks like the grape juice stuff is fine, after all.
Well - the waiting's over - the job's done!!
Because the Sevilles were frozen, I added a fresh lemon & an ordinary orange. Forgot to add more sugar. Pressure cooked 15 min from thawed - not frozen as the book says - pre-heated the dissolved sugar, added the fruit & cooked on to exactly 220F.
Couldn't find the jam funnel, so had real fun trying to fill the hot pots!! Glad I had bought one of those fireproof gloves.
Result? An acceptable set. Don't like it stiff. Cloudier than my ideal because, when cutting up the fruit I found that, unusually, the membranes had entirely dissolved, so all I put into 'the pip bag' were the pips
Of course, 'the family' were here yesterday & we're left with only 10 jars. But I suppose that's what we're here for??
why cant they invent taste-o-website?
Now thats what I call achunky marmalade!
Looks yummy Tim.
BTW, my lemon MAMADE marmalade has a delish tangy taste.
Debs ;D
Oh Tim, looks devine! Adore chunkiest marmalade on freshly made, warm, proper bread with plenty of butter!
I shall be around for afternoon tea, get the kettle on. ;D
