Title: Italian style pickled veg

I made these yesterday:

Even un-matured they taste delicious.

The recipe is for a short-storage pickle, though.

Does anyone have a similar recipe that will keep longer, like for a year or so?  I've Googled but not found anything so far. I've also looked in 'Putting Food By' which I got on Jeannine's recommendation (thanks for that) but there isn't a similar recipe and the trouble with PFB is that it makes me too nervous to adapt any recipe.

Anyway, ideas gratefully received. Thanks.

Thank you forn the recipe, it is interesting that he refers folks to the USDA canning guide too.

I will have a search and see if I can find you something similar.

Thanks, Jeannine - I'd be very grateful if you can find something as if so it would be another excellent way of preserving courgette/summer squash for the winter. I used mixed squash and it was so pretty as well as tasty.
