has anyone got a plum jam recipe please,either cooked on the stove or in the microwave,thank you.
6lb (2.72kg) plums
1/2 pint (284ml) water
6 1/2lb (2.95kg) sugar
Cook fruit gently in pan with water until tender (I leave small plums whole and remove stones afterwards - halve if large). Add sugar and stir to dissolve at low heat. Boil rapidly until jam sets when tested - I find 10-15 minutes works for me. Skim, remove stones and pour into hot jars.
This is a lovely simple jam.
I'd recommend washing, halving and removing stones before you start - this gives you the opportunity to remove any nasties at the same time (I don't like meat with my jam ;D )
You can also microwave the plums in a large pyrex bowl without any water - in my microwave 4lb takes about 20 minutes in total, stirring 2 or 3 times throughout.
Then weigh the cooked plums, tip into a pan, add the same weight of sugar, stir to dissolve and cook till done. It's a bit quicker this way.
(If you weigh your pyrex bowl first it's easier)
Can you use frozen plums?, ive got so many picked today (well they are actually merryweather damsons but taste really nice!)

Have made before using frozen plums and no problems. Actually, I think it forces nice slow initial cooking to soften fruit.
