Yesterday was a day of mass production, with all the beetroot harvested at 11.30 the OH proceded to make (and a lot of mess ::) ):

Here you go Phil,
Beetroot Relish (ideally store for a month before use but good to go after 2 weeks)
1.35kg (3 lbs) Raw Beetroots
1 Teaspoon of caster sugar
450g (1 lbs) Shallots finely chopped
600ml (1 Pint) cider or white wine vinegar
1 tablespoon of pickling spice tied up in a square of muslin (or you can buy already bagged)
450g (1 lb) granulated sugar
Put beets into heavy based saucepan cover with water and add the tsp of caster sugar, bring to the boil, and simmer for an hour or until the beets are cooked. Drain and leave to cool, when they are cool enough to handle peel the skin and dice into small cubes.
Rinse out saucepan add the shallots and vinegar and simmer over low heat for 10 mins. Add the beetroot cubes and bag of spice, then graduly add the sugars, stirring until dissolved. Bring back to the boil and keep at rolling boil for 5 minutes, reduce the heat to a gentle bubble and cook for a further 40 minutes. Remove bag and jar up as normal (hot sterilised jars)

Beetroot, Date and Orange Preserve:
300ml (1/2 pint) cider vinegar
200g (7oz) granulated sugar
250g(12oz) raw beetrotos
250g(12oz) eating apples
225g(8oz) red onions finely chopped
1 garlic clove crushed and chopped
2 oranges finely grated
1 teaspoon of ground allspice
1 teaspoon of salt
175g(6oz) chopped dried dates
Put vinegar and sugar in saucepan, over low heat for about 10 mins sugar should be dissolved. In the meantime, peel and chop beetroot into 1cm (1/2 inch) pieces, and do the same with the apples, (I tend to quarter them and take out the core before I do the choppy bit). Then once you have done this put the beetroot, apple, onions, garlic, allspice and salt, give a good stir, bring to the boil, reduce to a good rolling boil for a good hour, stirring to make sure it doesn't stick. After an hour add the dates and continue at the rolling boil for another half an hour. Test on saucer to see if it sets and if it does then jar up in hot sterilised jars..
They say it's best to wait a month before eating and will last up to a year. ;D
