Title: chard, chard, everywhere

Last year's chard is bolting like mad. I want to harvest and store it all, but not sure how. I will make a few chard quiches for the freezer, but can't think of anything else to do with it. Can I blanche and freeze it? Anything else easy that I can make with it?

Other day used in a baked veg version - just layer of onion chunks, thick layer of chard including stalks, layer of sliced potatoes then 200ml veg stock + 150ml double cream (largish oblong pyrex dish). Baked gas 6 upper middle shelf for 1.5 hours covered with foil until last 20 minutes. It was delicious. (Could play around with timings/heat and other veg/stock/cream dependent how big your dish, greed etc)

I am very fond of this, and chard works as well as spinach. I add various herbs, too.
