Title: leeks and parsnips

I still have quite a few parsnips and leeks on the plot.the parsnips have regrown big tops.will they still be ok to eat or will they be woody?likewise how long can I eat the leeks or do they go off?

Just dug out all my parsnips as they were geting a bit woody.

Still eating the leeks tho - mainly in leek and potato soup - tastes yummy still

I cut out the woody core of parsnip and use the outer part-unless turning it into wine ;)

They may be soft but should be okay for soups and cooking with cream...So yes.

I m having yummy leek and broccoli quiche tonight with last years leeks. Just avoid the ones that have a flower spike.

Although they are fantastic bee plants in flower so rather than chuck any woody ones replant them somewhere to flower.

Both are past their best of course but there is still plenty of flavour for stock.

Cut length ways and take out the middles on both the outer bits are fine to eat. Messy to serve as a veg but ok for soup.

The inside 'woody bits' are generating the seeds.

The outer bits are fit to eat but the inner bits are flavourfull enough to use to make stock but unless one is very hungry they are too chewy.

As I say cut long ways and you will see what I mean.
