Title: Happy recipe "accident"

Yesterday I started to sort out my one and only pumpkin..so far I've been just caressing it when walking by my dining table..it's been standing on the middle of it..it was pretty though ;D
Once I started to cut it into chunks, it was like horn of plenty never seem to go down and it had surprisingly thick flesh too.
Anyway, I made 10 litre pot full of pumpkin 'mash' that I sweetened with sugar and gave a dash of lemon juice and grated rind too..but it didn't quite have enough sugar to make just right...so I dived into fridge and used my lemon curd jar up.... :-X I blended it all smooth....and ahhhhhhhhhh...gorgeous!..I was going to make some pies..but having it as it is with natural yogurt... :P :P
Even OH who is bit 'funny' with things involving pumpkins and squashes did drool over it...almost like apricot puree ;D...now I've got big pot of it in fridge and rest of it in freezer for later on..I might even try to make pumpkin pie too.
