Saw the Pam Corbin (river cottage spinoff program) with this and could have sworn they said the recipe was on C4 website.
It might have been then (Nov 2010) but it's not there now.
Can anyone give me the rough proportions of beet/tomato/horseradish?
I can do the vinegar by taste but horseradish is a bit of a sod - tends to creep up when it's raw, tends to fade away when it's cooked...

Update:
It's very nice, but I'll be using half as much sugar and twice as much horseradish next time - maybe a bit more balsamic vinegar too (actually I used vinegar from pickled walnuts which actually gives a stronger taste but it still needs more).
It's a matter of personal taste - this chrain recipe looks more my style! (though it might still benefit from the grilled tomatoes).

Subtlety is great when you're talking about the flavour of say, steamed fresh plaice.
But with the flavour of horseradish - if you can't taste it it's not subtlety, it's blandness!

I make chrain which will keep fine, but you need to use slightly different proportions:
30% horseradish to beetroot weight, then just 10% sugar to combined weight then 25% vinegar to combined weight, so
Horseradish 300g
Beetroot 1000g
Sugar 100g
Good malt vinegar 350ml
Grate horseradish, rough process the beet. Put all in pan, bring to boil and then turn down and simmer for about 10 minutes, then jar.
I don't rate Pam Corbin's chutney either, I made it for the first time last summer. I thought it was a waste of good beetroot/tomato. My daughter liked it, though. It also hasn't kept very well.
I haven't yet found a recipe for beetroot chutney that works for me, so thanks, I'll try the chrain this year.
