Hey you, way back when, when the sky was blue and the garlics were freshly harvested, I copied down your recipe for pickled garlics and made a couple of jars, put them in my preserve cuboard, and promptly forgot all about them. Today I decided to have a poke around in there and check out my winter preserve supplies, and there they were, looking at me. Well, I have lovely ham, mashed spud/pumkin/celeriac and pickled red cabbage for my tea tonite, and I thought, no onions.....I will try Gavins garlics. MY GOD MAN THEY ARE WONDERFUL! They slip out of there outer skin and are crisp, sweet and a little sour and like candy! Only the faintest hint of raw garlic, instead they have a warm comforting taste and aroma about them. Piled them high on my plate ready for tea. This year, 4 jars!
Only four jars this year??? WHATEVER ELSE YOU DO, DON'T LET THE CHILDREN TASTE THEM! My kids will devour a jar quicker than a Mars bar. Four jars = four days (unless I hide them well!).
Hey, but it weren't me - I only tried to replicate an Iranian recipe; and that has to be one of the least-known, but finest, cuisines there is.

Oh gosh I just love garlic on its own so will HAVE to pickle it like advertised!!!
Problem is the morning after leaves you with very little friends ! LOL ;)
Well, after I completed an entire jar in 48 hours (!) nobody commented and I didn't notice everyone standing down wind of me! Ava and the kids would have told me immediately if I stunk of garlic but no comments, so maybe the strong oils are softened by the pickling.
They are delish and lovely scattered over chips! :P

'Isle of Wight Garlic is planted from October to February and the first garlic shoots mark the rows from January onwards. Garlic requires a spell of cold weather, generally 1-2 weeks at 0-4C, to prepare itself physiologically for bulb formation later in the year. '
So you can still get some in the ground. ;D
