Title: Freezing cream?

I have rather a lot of cream left & wondered if it's possible to freeze it safely. Years ago I used to buy it frozen from Iceland. It was in individual portions & was very handy.

Double cream and whipping cream freeze Ok. Single cream does not freeze well - it seperates when thawed.

I inadvertently bought a second tub of double cream just prior to the holiday and realised that there was no way I could use it all up by the expiration date so I froze one tub.

Another thing I often do is to make butter in the electric mixer with double cream - unused tubs - if they are a few days beyond their use-by date. Makes lovely butter!
