I know this is probably a stupid question, but I'm going to ask it anyway.....
Is it necessary for chillies to be ripe (red) on the plant before the seed can be saved? If I pick them green, and they change colour afterwards, will the seeds be alright?

..most likely not...if your seeds are still green the seeds are not fully developed yet and once taken off from plant there is no water and nutrients entering anymore to finish the process..how ever..if you fruit is partially ripen..then there is good chance that the seeds are developed and only need to 'ripen off'.
If you cut one of the green chillies open and have a look inside and compare to some mature ones..immature ones are really thin without any 'plumpness'..like there is nothing inside just outer 'shell' of the seed.
