Hi i have done a search and although i have come up with loads of ideas i have one question to the people that use the microwave and oven. Do you cut the leaves off and peel before doing either or do you do this afterwards (like the boil option).
I have some beetroot ready to be cooked. (I haven't got a microwave at the moment - my hubby had a little accident this weekend - but hopefully we will pick up another one real soon!)
This is our first year for growing beetroot and I had never cooked it before, but have been using the method I spotted on here somewhere. It works beautifully and hardly any of the juice is lost. You simply cut the stems to within about an inch of the beet,and leave the root intact. You wash off the soil and then wrap the beet in foil and stick it in the oven. The timing depends on the size. When you can squeeze it it's done. Unwrap and rub the skin-it comes off really easily. I've cooked several like this and they were scrumptious!
I cook mine in the microwave......I wash the beetroot leaving a couple inches of twisted off stem. I use a microwave steamer dish but if you dont have one you can use a microwaveable bowl, add about 2 inches of water, add one or two beetroot, cover with cling film leaving a hole or gap in the cling film.
1 average size beetroot cooks in my microwave in about 8 mins...2 beets take about 12~15 mins. I then let the beetroot cool a bit and then remove the skin. If I want to cook a lot of beetroot I get out my old pressure cooker and use that!

only time I ever peel mine first is either when pickling or when roasting with other vegetables, otherwise always in a terracotta dish in the Aga, with a drizzle of butter over it, then peel when done

yummy, really enjoyed my oven cooked beetroot (still no microwave!). They were delicious - so much so i will grow more next year (i only threw a handful of seeds in as i wasn't sure!?!)
