My parsnips are looking good this year (though you never know until you dig them up!). Does everyone wait until they've had a frost to sweeten them before lifting? Not sure if I can resist!

we plant an early crop and have been eating them for a couple of months, we have another bed I'm leaving for some frost..the early ones are lovely  :)

I've still some in the freezer from last year, so mine will stay in over winter to get that sweetness.     ;D ;D ;D

I'm not touching mine yet..there is so much other things to eat yet...so I'll leave mine be...at least untill tops have died down.

I'm a bit worried mine have been in the ground too long. When do your early ones go in, manics?

Mine have done really well this year too  :)
I start diging them up as soon as they are big enough, roast parsnip yum yum, though I would agree they are tastier after a frost.
My first bed was sown I think around end of April to begining of May.

we sow under fleece, caroline, late february, I think  :)

We sowed ours during april this year, but have done as early as feb. We have pulled a few for roast parsnips, but will leave the major until the frosts. Not sure why we do wait though we normally have so many we can't eat them all anyway!
