Title: Stuffed tomato recipes

On Wednesday I am thinking of doing stuffed tomatoes with a Cauliflower cheese.
Is there any recipes out there which do not need to much doing to them for a colourful dish to accompany the cauli cheese? :P

Stuffing things like peppers and tomatoes, I usually use some left over rice with chopped left over vegetables, cooked rice and veg, will freeze easily so that they can be recovered when needed.

I like baked beans with cauliflour cheese to be honest,  plenty of colour, if you are not a veggie add a rasher of chopped bacon and onion fried together and a chopped skinned tomato. It makes the baked beans look home made!

Have you tried cutting butternut squash into wedges and roasting it with a tablespoon of olive oil?   whole shallots can be roasted with them. sprinkle with a little chopped parsley just before serving.
