Title: Ripening peppers

I have a good crop of sweet and hot peppers but they are mostly still green. Is there a reliable way of getting them to ripen off the plants (like ripening green tomatoes)?

Treat as tomatoes - cool dark place - maybe in paper bags.  You can always try the old banana trick to hasten things up a bit..

I just bought my sweet peppers into the kitchen, and after a few days were fully ripe. For chillies, I like to keep some green anyway, so I pick and freeze them as they are

They ripen quickly when placed in a sunny window.
