I found, lately, that ordinary malt vinegar seems too harsh so I used balsamic vinegar last time, expensive but a better flavour  :)

Hadnt thought of using balsamic, will give it a try. Thanks for the suggestion.

tried  cider and red wine vinegar, too, both interesting tastes, I'm going to try shallots in cider vinegar this year, sorry, Dawn..I just clean, boil, cut up in slices or dice, bottle, pour over the vinegar, some warm it, I don't, add spices/chillies, depending on how I feel and cover, best after a few months

I pickle mine in a spiced sweetened vinegar which I make, I find plain vinegar a bot too harsh XX Jeannine
