Title: storing beetroot

Accidently grew 5 kg beetroot.  Can I freeze them blanched/unblanched or would it be better to try to stor in a bag of compost (unused) in the garage.

Freezing destroys the texture of beetroot. Store in compost in a cold place.

Get a bag of builders sharp sand and layer the beets in a box not touching each other.    Then take them as you need them.

YEP  thats what i do keep slightly damp
