   Can you store Beetroot seem to have lots of it ;D

I peel and boil my roots and then pickle them in jars for storing

Yes. In a box of sand or peat, as you do carrots.

Twist of the leaves (prevents excessive bleeding of the juices) then store in a box of sand/potting compost.  The sand needs to be just moist, the roots not touching each other.
