A couple of days ago a friend made lemon curd for the first time carefully following the recipe,
it seemed OK when she put it in the jars , but as it cooled it separated.
What do you experts think went wrong?. Can she reheat it and get it to set properly?

Microwave Lemon Curd
2 Lemons (juice & rind finely grated)
3 Eggs Whisked
2 oz Butter (or up to 4 oz)
8 oz Sugar (scant)
Melt butter, add rest of ingredients, 4 mins in Microwave(whisk every minute)
