I'm going to try it this afternoon with some courgettes ;D
Beer batter – very light and crispy, good with fish or veggies such as cauliflower, courgettes, onions rings
250g/8oz plain flour
60g/2oz cornflour
300ml/10fl oz sparkling beer or lager
300ml/10fl oz sparkling water
You may also add a teaspoon of ground cumin, a bit of chilli, fresh chopped herbs such as chives, tarragon, parsley....
Place the flours in a large bowl and whisk together.
Add the beer and soda water and mix to incorporate.
Whisk vigorously to get rid of any lumps.
Let stand for 10 minutes and then whisk again for 30 seconds.
The batter will fry crisper if no salt is added and it is not refrigerated so you need to add a sprinkling of salt once you've cooked and drained your goodies.
To make it even lighter like tempura batter, use all cornflour and no plain flour.

You know for years I looked for the RIGHT batter, the one I liked, light crispy super fir apple fritters fish and chips etc
I would try this and that add more eggs, or just yolks or just beaten whites nothing would give me THE batter, then one day I was talking to my step sister, long gone now bless her, she said, it's simple. She was a cook at Stoneyhurst College.
1 cup plain flour
1 heaped teaspoon baking powder
and enough water to make a thinnish batter,. yippee, thats the one I was looking for, try it.
I am having fish and chips tonight with this batter I dip my apple rings or fish in the dry flour first then add the water then dip the apple or fishg or what ever, then into HOT oil. qahtan

Recipe enough for 6 yorkies or 2 large fish.
plain flour 4 ounces
2 medium eggs
half milk /half very cold water
beat to quite a thin mixture
Leave to stand if possible for about 10/15 mins ( cool place)
Put into very hot fat if its for fish Or a very hot oven for yorkies.
Works great everytime.
