Title: Something to do with courgettes

I've been picking White Volunteer courgettes every day and saving them till I had enough to do a big bake.

I put courgettes (any kind will do but WV are my favourite) onion, Anya potatoes, sweet peppers and chilli (I used Sante Fe) then drizzled it with olive oil and salt and pepper to taste.

I made 3 trays of it, each measured 14 x 14 inches.  They took about an hour to cook. 

The idea was that I made a lot in one go and freeze it in small plastic containers.  But what will probably happen is that my husband and granddaughter will scoff the lot!

That looks delicious.....going to have to give it a go.....got courgettes everywhere...as you do  ;D
