steam beetroot, liquidize the beetroot add tahini paste (amounts depending on quantities and taste, but usually a couple of tablespoons for 5 beetroot) add chopped mint and mix. this sounds revolting but surprisingly is very good. contrast in the colors works well.

i'm not sure i suppose 3 days'ish, how it tastes smells etc. sorry i haven't got measures but it its down to taste i think with the tahini paste. hope you enjoy the dip!
