Title: calabrese flowers

One of my calabrese looked like it was starting to form its "head" but then overnight it shot out on a long stalk and appears to be going to have yellow flowers .  Is this what is meant by "bolting", and can anything be done to encourage it to behave normally? There appear to be other florets further down.  I am hoping that they're not all going to do this.

chop the top off and eat it, gwynnethmary..the side shoots should develop , I think it's to do with the weather  :)

All of my calabrese plants have done this - first time I've had this happen in this way. But I'm harvesting lovely shoots (more like sprouting brocc.) and we had our 3rd meal from them this evening and there's more to come. I think there's a japanese broccoli that is supposed to be exactly like this - has anyone tried it? Think I might give it a go next year.
