Title: Is it a chutney, relish, sauce or what?

I got a very ripe pineapple for 50p on the market and it was lovely and sweet ,begging for immediate consumption.

We managed half with ice cream and the following day were having pork. Usually I enjoy my apple sauce with pork but as I know gammon and pineapple go so well, I decided to make up a recipe.

I slowly heated the finely chopped pineapple in a little juice from a carton, which was also lurking in the fridge and added a table spoon of honey and an ice cube of chopped red chilli and there was a tiny bit of green attached to it (that is me bagging the lot together).

I thickened it with cornflour mixed with pineapple juice. It was lovely.Not that hot and it went better on a sandwich with cold pork the next day. Just a hint of heat after eating.

It wont keep long so I put it in tiny tubs to freeze. For next time we have pork.

Was it a Genius sandwich ;). I don't know what it qualifies as but it sounds lovely, I must copy that recipe down.

It certainly was a genius sandwich.

I spoke to an old friend whom I had not seen for ages today and told her that I felt several percent better on the wheat free diet.

She told me that she had tried it but found it 'rather difficult' Then added. 'With the difference I can see in you. I might just go back on to it.

Not sure if that is a compliment or not..........

All I know is that I have found your support Has been priceless. Thanks

Twas a pleasure ;). I had a salad sandwich today. Heavenly.

...and if you drop some soya sauce to that you get yourself lovely sweet and sour... :P
