Title: It's pancake day
Post by: lillian on February 16, 2010, 10:40:17
I almost forgot pancake day. Banana pancakes with creme fraiche are a favourite in our house. What's yours?

I make banana pancakes most Sundays but for Pancake Day it's got to be lemon and sugar. Fresh lemon though not Jif, which is good for cleaning!

Always fresh lemon and sugar.  Other times it doesn't matter what the filling is.

None for me as I'm on a blubber elimination drive to get fit for spring cleaning in the garden but I've just done what I call English pancakes for Possum and two friends - fluffy drop scones served with Nutella for them, strawberry jam for OH.

For myself, I love sugar and lemon or maple syrup but Possum's all time favourite is what the Belgians call crèpes Mikado - two hot pancakes, each folded back over a large dollop of vanilla ice cream, dusted with icing sugar and a generous serving of hot chocolate sauce to finish and, in some cafés, a squirt of Chantilly whipped cream.  Wicked.

we normally go with the 'lemon and sugar' sketch, (with some 'orange and sugar' for tracie's youngest boy), but this year I'll be having a few with some of the honey I collected from the bees in the back garden !!  ;D ;D ;D ;D

We're going to make mini pancakes with the kids at church- using tea lights as the heat source, with the batter in small foil cases.  Apparently Brownies do it, so we think we can too!  Watch this space!

I'm mainly a sugar and lemon guy, but also anything sweet that is in the cupboard.

Does anybody use non-wheat flower, my OH is off wheat and dairy, she has goats milk so no problem there, but what sort of flower to use?

I do not eat wheat so pancakes are a major issue.  Used to love with with lemon and sugar.

I have made pancakes with buckwheat or chestnut flour.  They hold together and taste ok but nothing like a real pancake.    A pancake made with equal quantities of cornflour and buckwheat flour makes a good pancake.  Just had some yum.

The Tuscan herb pacakes sounds great - what herbs do you use, and do you mix the herbs in with the pancake mix or after? Basically what I'm saying is recipe please  :)
