Chocolate Butternut Squash Cake
300g Self Raising Flour
1 tsp Cinnamon
125g Butter or Marg
2 Heaped tbs Cocoa Powder
275g Brown Sugar
2 Large Eggs
300g Squash Puree (made from 500g raw)
100g Saltanas
pre heat oven 180 C
Puree : 500g raw Squash, dice and boil until soft, drain it, mash it.
Mix together sugar and marg.
Beat the 2 eggs and add to the sugar and marg, mix.
Mix together the flour, cinnamon and cocoa powder, add gradually (mixing each time) to the egg, sugar and marg mix.
Finally mix in the pureed squash and saltanas.
Bake for 40 minutes, test with a knife, if knife has wet goo on it, put in for a further 5 to 10 minutes cooking. Keep testing / cooking until knife comes out clean.
ooh, I'll get me Dad onto that Mortality - he's the squash cake person. Don't think i'll tell him it's Mortality Chocolate Squash Cake though :D

Dont boil it for too long and drain it well before mashing, the final cake mix is quite wet but it cooks up fine, to a nice moist cake :)
Another option for cooking the squash - admittedly better for "round" or regularly-shaped squashes, rather than butternuts - is microwaving them. Just pierce the whole squash and give it 5 mins a lb. It's easy to add on extra time at the end if you think you need it.
This looks good but we have no butternuts left so I'll try it with a round orange pumpkin.
I have to make a chocolate cake for my daughter and her riding class on Saturday but she's said it must be without carrots, beetroot or any other "funny" stuff cos they don't like it. Can anyone help? I find straight chocolate cake recipes a bit dry and lifeless.

I have got one for brownies it was in Somerfield book and have made it several times you need a 8inch by 10inch tin, lined with baking paper and it makes 20.
150g butter
150g plain chocolate
3 medium eggs
200g caster sugar
75 g chocolate chips or any chopped nuts
125g plain flour
melt the butter and chocolate
beat the eggs and sugar in a separate bowl add the butter and chocolate then fold in the flour and chocolate chips. Pour into the tin
cook for 25 to 30 minutes at 180 degrees. Leave to cool in the tin then slice into squares.
The outside should be crisp and the middle gooey and it does keep a few days, but is addictive. nice done with walnuts instead of chocolate chips but kids don't always like nuts.
