Is it possible to make a Pumpkin / Squash cake using say a carrot cake recipie? Anyone tried?

Yes, sort of. I tried an Italian Pumpkin cake and it was delicious and will definitely make it again

I made a cake substituting courgette for carrot this summer. It went mouldy within 36 hours. :'( Shan't bother again!
