I had some cake left over because I cut one into smaller portions for presents and had 1/4 left. Made it into ice-cream (ala 2 fat ladies christmas pudding ice-cream recipe). Tastes lovely, although not completely frozen yet!
Some ice creams are better served slightly soft.
I had some years ago some one had made and it was, nice for a change.
It is always hard work using up 'left overs' and I think Christmas cake or any rich fruit cake for that matter is one of the most difficult things to use up because it always tastes, like christmas cake.
Birds usually end up with the final bit.
We actually have a full christmas cake. This was just less than half a cake as left over from the one I ice and give away. As well as the ice cream I have made some 'truffles'. They are the christmas cake minced up in the blender with extra brandy and then rolled in chocolate. Have drizzled icing over the top and put tiny bits of cut up red and green wine gums to look like holly. They actually look really good and are very boozy. Will take them to the xmas eve party. ;D
