Title: blue hubbard turning orange....

Is that normal, or does that mean I better eat it soon? It is still quite hard and I am storing it in our unheated utility room, its cool but gets some indirect sunlight...

Excuse my ignorance as I am new at this...

It's fine until all orange... and then good for a month or so as long as you look out for moulds..  :)

A good winter squash will stand until April/May in my experience..  :)

Several of the stored Winter Squash continue to change colour the longer they are in storage. Crown Prince and BonBon get touches of orange shining through; Pink Banana gets pinker; Cornell's Bush Delicata is getting more yellow every time I look at it.
Remember to keep checking your stored squashes in case the skin of any start to rot.

Galeux d'Eysines is probably the most extreme example, chaning from a rather camp pink colour, growing progressively more warty untilk the skin is one big mass of warts.... sort of the squash of Dorian Gray......
