I have managed to get 3 pieces of ginger to shoot,one is big but pale greenish white,two are small but a nice dark green. How do I overwinter these to keep them going until the spring and hopefully grow on again?

keep them warm, and on a window cill, if you ain't got a heated glass-house. :)

They are beautiful plants but you will need a conservatory over winter. An Indian gentleman told me that to develop the root you should grow it in sand. The ones i've grown in sandy compost didn't develop tuberous roots. I will try again using sand next time I find some sprouting in my veg rack.

Quick question - standard washed sharp sand with nothing added? We're trying to grow some for the first time- alternatively how would my alluvial silt soil  with no organinc matter in it do, that sheds water like crazy when dry and drains it almost as fast when saturated.

 This is ginger that I grew and preserved a few years ago, I just grew  mine in a very large flower pot indoors. even forgot to water it some times.
