1. Some people are not too keen on Chicken legs.
2. Lots of legs in the freezer.
3. Need Chicken Pilaf.
So let's take the meat off the bone. But, first, let's get rid of the fat by roasting.
Result had a lot more caramelly flavour than the usual breast bits used.
I was quite pleased!

does sound and look good Tim! I find roasting always add that extra bit of flavour - nothing like using up left over roasted veg in a soup

I admit I cook cheap packs of chicken thighs and legs like this most weeks, then strip the meat off for casseroles etc. Cats get the rest! ;D
