Hiya, having been struck down with yukky colds this week, we've been on soup and the freezer is nearly empty, I've done a search and found oxtail, any minestrone buffs out there?

We don't call it Minestrone - it's "Chunky Peasant Soup":
Soak some dried beans overnight.
Stew (in oil, dripping, or whatever) some onions, carrots, parsnip, turnips, leeks, celery, chard stalks, garlic, all diced. (Some or all, as available, or as the fancy takes you.)
Some diced ham/bacon - home-cured if possible - is a good idea.
Add the beans, plenty of home-made tomato puree or sauce, ditto of herbs, and a glass or two of wine or beer.
Mix well together and cover with plenty of water and/or stock. Simmer till the beans are done.
Then add some diced potatoes and some shredded cabbage and/or chard leaves and cook for another 15/20 minutes.
Taste and correct the seasoning at some point about now.
Stir in a handful of pasta bits for the last couple of minutes.
Serve with grated Parmesan and good bread in hefty chunks.
(As you will appreciate, the exact ingredients, quantities and timings are absolutely vital!!)
(And it's the soup that's chunky, not necessarily the peasants!!)
A good one for feeding the troops. Teenagers love it!
My cure for a cold is Onion soup and it is sooo easy
Just let loads of chopped onions sweat down slowly to almost nothing with a thingy of butter then add beef stock. (I love oxo cubes best in this one but it is up to you)
Thicken if you want to with cornflour add salt and pepper to taste.
