I made these last night for our halloween party and they went down really well.
Cookie base:
2 cups softened butter
1 cup sugar
4 cups plain flour
Mix sugar and flour and rub in butter to make crumbs.
Pumpkin Filling
2 cups pumpkin puree (I microwaved the pumpkin)
2/3 cup sugar
1.5tsp ground cinnamon
5oz cream/evaporated milk
4 large eggs
pinch of nutmeg and ginger
Mix all ingredients together
Place bit of dough spread out in muffin tin to make a cup and add a tablespoon or so of the filling
bake at 175 degrees C for 10-15 mins until set. Makes about 35-40 tarlets with an english muffin tin.
I'll bring this to OH's attention as we usually do pumpkin cakes for bonfire night. :)
