I'm just leaving them where they are, harvest as required.
My seed packet says 'store in a cool, frost free place and cover with straw or dry sand'.

I thought I read somewhere they they improve in flavour after a frost, (like parsnips) is this right?

Mine just stay in the ground and are harvested as and when we need them.

I have pulled mine up (yesterday) as a lot of them were rotting and a guy at the plot said that he freeze's his so that's what I'm going to do with mine.
